Ingredients
- 2 cups apple juice
- 1 1/3 cups rolled oats
- 1/2 cup wheat germ
- 2 cups all purpose flour
- 1 tbs baking powder
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 1/4 cup maple syrup
- 4 tbs unsalted butter plus extra for greasing
- 2 large eggs
- 1/2 cup dried cranberries or cherries
- 2 large Granny Smith apples, peeled cored, and diced TINY

Preparation
Step 1
In a saucepan heat the apple juice to boiling and por over the oats and wheat germ in a bowl. Let stand.
In another bowl, combine flour through salt. In another bowl, beat buttermilk through eggs. Add the buttermilk mixture and cranberries to the dry ingredients and mix until just combined. Stir in the oatmeal and apples.
Heat a griddle and grease lightly. Spoon about 1/4 cup for each pancake. Cook. Serve with maple syrup, Swiss Whipped Honey Butter, Sugar-Free Apple Spread, or Maple Sugar Pecan Butter.
