Ingredients
- 2 oz. macadamia nuts
- 4 oz. bread crumbs
- 6 oz. mahi mahi
- 4 oz. butter
- 4 c. chicken stock
- 4 oz. pineapple chunks
- 4 oz. papaya chunks
- 4 oz. mango chunks
- salt/pepper/ sugar to taste

Step 1
Blend nuts and bread crumbs until finely ground. Coat both sides of fillets. Melt butter and fry fillets until golden brown and put in baking pan. Simmer chicken stock, pineapple, papaya and mango along with salt, peper and sugar until it thickens (approx. 30 min.) Strain. Reserve the sauce and leave over low heat.
Bake the mahi mahi for 10 min. in 375 F. oven. Internal temperature should be 140 F.
Plate fish and coat lightly with sauce.
