Ingredients
- 12 oz moist pack pitted prunes, chopped
- 1 cup boiling water
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 3/4 cup sugar
- 2/4 cup chopped walnuts
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1 large egg, beaten
- 4 tbs unsalted butter, melted

Step 1
Preheat oven to 350F. Grease a 9 by 5 inch loaf pan.
Put the prunes in a bowl and add the boiling water and vanilla. Let stand at room temperature 30-60 minutes, until cool.
Stir together flour, sugar, walnuts, baking powder, soda, salt, cinnamon, and nutmeg. Make a well in the center and add the egg, unsalted butter, and prune mixture with its liquid. Stir until just evenly moistened.
Spoon the batter into the prepared pan.
Bake until the top is browned and firm, and the loaf pulls away from the sides, 55-60 minutes. Transfer to wire rack to cool, and unloaf.
