Ingredients
- 1 1/2 cup flour
- 1 1/2 cups all purpose flour
- 1 1/4 cups polenta
- 3/4 cup cake flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoon salt
- 1/2 cup cold butter cut into small pieces
- 1/3 cup olive oil
- 3 eggs
- 1 1/3 cups buttermilk
- 1/4 cup chopped parsley
- 2 tablespoons chives
- 2 tablespoons basil

Preparation
Step 1
Preheat oven to 375 ° F/190 ° C.
Grease muffin cups with butter or cooking spray.
In a bowl mix the flour, polenta, cake flour, sugar, baking powder, baking soda and salt.
With an electric mixer on low speed add the butter and olive oil and whisk until thick crumbs forms.
Add eggs, buttermilk and chopped herbs and stir until the dough is smooth and the herbs are well integrated.
Place dough in the muffin cups and bake for 20 minutes.
Remove from oven and let cool in pan 5 minutes, then transfer to a wire rack and let warm.
