Ingredients

  • 2 avocados
  • 1/3 cup grape or cherry tomatoes, sliced in half
  • 1/3 cup English cucumber, diced
  • 1/3 cup sweet pepper (red, yellow or orange), diced
  • 2 Tbsp. red onion, thinly sliced
  • 2 Tbsp. fresh cilantro, chopped
  • 1/4 cup crumbled feta
  • 1 small lemon
  • 1 Tbsp. olive oil
  • black olives for garnish
  • salt, to taste

Step 1

Split the avocados and remove the seed. Use a spoon to scoop the avocado out of the shell in one piece. Reserve the shells.

Chop the avocado into bite-sized chunks and toss together with the juice of half the lemon. Toss in the tomatoes, cucumber, peppers, onion and cilantro. Squeeze the juice from the rest of the lemon over the salad and add the olive oil and a pinch of salt. Toss all together and have a taste...add more salt if needed. Spoon the salad mixture into the shells. Top with the crumbled feta and an olive. Serve immediately. Enjoy!
