Ingredients

  • 2 split boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 1 extra-large egg
  • 1/2 tbsp water
  • 3/4 cup seasoned dry bread crumbs
  • Olive oil
  • 3 tbsp unsalted butter
  • 1/3 cup freshly squeezed lemon juice
  • 1/2 cup dry white wine
  • Sliced lemon, for serving
  • Fresh parsley

Preparation

Step 1

Preheat oven to 400 degrees F.

Pound chicken out to 1/4 inch thick.

Plate 1: mix flour, 1/2 tsp salt, 1/4 tsp pepper

Plate 2: beat egg and 1/2 tbsp of water

Plate 3: bread crumbs

Dip chicken in each mixture.

Heat 1 tbsp of olive oil in large saute pan on medium heat. Cook chicken for 2 minutes on each side. Place on a sheet pan and bake for 5-10 minutes

Sauce:
Heat 1 tbsp of butter on medium heat.
Add lemon juice, wine, lemon halves, 1/2 tsp salt, and 1/4 tsp pepper. Boil on high heat for 2 minutes. Discard lemon halves and serve with a fresh lemon and parsley.
