Ingredients

• 1 box chocolate cake mix
• 1/2 c. butter, softened
• 2 tsp. instant coffee granules
• 2 tsp. vanilla
• 2 eggs
• 2 spotty bananas, smashed
• 3/4 c. flour
• 1 c. mini chocolate chips
• 1/2 c. toffee bits
• pinch of salt

Step 1

Preheat oven to 350* In a bowl, stir together coffee and vanilla until dissolved. Set aside. In a large mixing bowl, lightly beat cake mix, butter, coffee, salt, vanilla, and eggs until combined.

Add the bananas and flour and beat gently. Stir in the chocolate chips and toffee bits by hand. Drop by large spoonfuls onto a baking sheet. Bake 12-14 minutes.

Cool on sheet for 1 minute before removing to a cooling rack. Store in a loosely sealed container. Makes 24-36 cookies, depending on how big you make them.
