Ingredients

  • 1 1/2 cups boiling water
  • 1 pkg lime jello (8 serving size)
  • 8 oz crushed pineapple, with juice
  • 1 cup cottage cheese
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup chopped walnuts
  • 1 cup mini marshmallows

Preparation

Step 1

Dissolve jello in boiling water. Stir pineapple and juice into gelatin and refrigerate until consistency of unbeaten egg whites (about 1 1/4 hours).

Whip heavy cream.

Stir cottage cheese and cream cheese together in a large bowl. Fold in whipped cream.

Beat cream mixture into gelatin with a wire whisk until blended. Stir in walnuts and marshmallows.

Pour into sprayed 6 cup mold. Refrigerate 4 hours or overnight until set completely.

Unmold and serve.
