Ingredients

  • 4 Lrg. Baking Potatoes
  • 2/3 cups Butter or Margarine
  • 2/3 cups All-Purpose Flour
  • 6 cups Milk
  • 3/4 tsp Salt
  • 1/2 tsp White Pepper
  • 4 Green Onions - chopped & divided
  • 1- 1/4 cups Cheddar Cheese - shred3 & crumbled
  • 1 jar Sour Cream (8 oz.)
  • 12 slices Bacon - cooked & crumbled

Preparation

Step 1

1 PreHeat oven to 400°.
2 Wash Potatoes & prick several times w/ a fork; bake @ 400° for 1 hour or until done. Let cool.
Cut Potatoes in 1/2 lengthwise; scoop out pulp & set aside. Discard skins if want too. Melt
Butter in heavy saucepan over Low heat; add flour, stirring until smooth. Cook 1 min., stirring
constantly. Gradually add Milk; cook over Med. heat, stirring constantly, until mixture thickens
& is bubbly.
3 Add Potato Pulp, Salt, Pepper, (2) tbsp. Green Onion, 1/2 cup Bacon, & (1) cup Cheese. Cook until
thoroughly heated, & stir in Sour Cream. Add extra Milk if necessary, for desired consistency.
4 Serve w/ remaining Green Onions, Bacon & Cheese.
