  • CAKE:
  • 1 package dry yeast
  • 1/2 cup warm water
  • 2 teaspoon sugar or honey
  • 2-1/2 cups all-purpose flour
  • 2 cups warm water
  • 2 cups Herman
  • 2 cups flour
  • 3 eggs
  • 2/3 cup light salad oil
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1-1/2 teaspoons cinnamon
  • 1 cup sugar
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger

Preparation

Step 1

Mix yeast, 1/2 cup water and sugar or honey. When yeast is foamy, stir in flour and additional water. Place in large crock or glass jar, cover with damp cloth and rubber band. (Do not use a metal container). Keep at room temperature for 5 days, stirring daily with a wooden spoon. After 5 days feed Herman 1 cup flour, 1 cup of milk, 3/4 cup sugar. Keep covered under damp towel at room temperature. Stir daily.

On 10th day feed Herman 1 cup flour, 1 cup milk, 3/4 cup sugar. Herman is now ready to be divided up and baked. Use 2 cups for baking. Save 1 cup and continue feeding on the fifth and tenth days for 10 more days (when he is ready to bake again), and give 2 cups to friends to grow.

Preheat oven to 350 degrees. Generously grease a 12-cup bundt pan. Mix all ingredients together until smooth, adding 2 cups of optional ingredients to batter. Bake 1 hour. Remove from pan and cook on rack.
