  • 2 large eggs, lightly beaten
  • 2 cups all purpose flour
  • 1/2 cup vegetable oil
  • 1 tablespoon sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 cup canned (15-ounce) mashed sweet potatoes
  • Non-stick cooking spray for the waffle irons
  • Maple syrup

Step 1

Preheat waffle iron.
In a large bowl, with a hand held electric mixer set on medium, beat the eggs, flour, oil sugar baking powder, salt, vanilla and pumpkin pie spice. When the batter is smooth, stir in the sweet potatoes.
Spray the waffle iron with the non-stick spray. Pour approximately 1 cup of the batter into the center of the waffle iron, then close the top. Follow the instructions for your waffle iron, baking the waffle until they are crisp and hot.
Remove the waffle from the iron; repeat this process with the remainder batter. Serve hot with maple syrup.
