Ingredients

  • 1 1/2 pints Pistachio Ice Cream
  • 1/3 cup chopped Pistachio Nuts
  • 6 Maraschino Cherries
  • 1 1/2 pints Vanilla ice cream
  • 1/4 teaspoon Rum flavoring
  • 3/4 cup of whipped cream
  • 1/3 cup pre-sweetened cocoa powder
  • 1/2 cup of whipped cream
  • 1/4 cup sifted powder sugar
  • 1 ten ounce package frozen raspberries thawed, drained, sieved

Preparation

Step 1

Chill a 2 quart mold (metal or glass, freezer proof)
Stir in Pistachio ice cream just to soften. Stir in Nuts. Spread mixture into mold around sides and bottom (this becomes the outer layer). Freeze until firm.
Arrange cherries on the bottom of the bowl. Freeze.
Stir vanilla ice cream just to soften, add rum flavoring and re-freeze if necessary. Quickly spread over first layer and freeze.
Beat 3/4 cup whip cream and cocoa powder until soft peaks form. Spread over vanilla layer. Beat 1/2 cup whip cream with sugar just until soft peaks form. Fold in the berries. Spoon into mold, smooth the top,
Cover and freeze over night.

To serve, turn over mold onto chilled plate, rub mold with hot cloth/towel to lift and remove mold. Cut in wedges and serve.

Serves 12.

Great for holiday's or special occasions.
