Ingredients
- 3 tablespoons red wine vinegar
- 1 1/2 tablespoons extra virgin olive oil
- 14 teaspoons coarsely ground pepper
- 1 clove garlic minced
- 3 cups cooked long-grain brown rice can be white
- 1 1/2 cups chicken breast cooked & diced
- 1/2 cup roasted red peppers
- 1/4 cup ripe olives med pitted
- 1/4 cup chopped chives
- 1/4 cup basil fresh & chopped
- 1/4 cup oregano fresh & chopped
- 14 ounces artichoke hearts quartered

Step 1
Combine vinegar, olive oil, pepper, and minced garlic in a small bowl. Set dressing aside. Combine rice & remaining ingredients in a large bowl. Add dressing, stir until well blended. Yield 4 servings(serving size 2 Cups) Great with smoked chicken. If it needs zip and or moisture add a little no fat italian salad dressing.
