Christmas Crullers - Fattigman

The Norwegian name for these delicate, crisp, diamond-shaped cookies is fattigman or "poor man". They were named for the country cooks that orignated the recipe.

Ingredients
- 2 eggs
- 2 tablespoons heavy cream
- 1 teaspoon vanilla
- 3 tablespoons sugar
- 1 1/2 cup flour
- fat or oil for deep frying
- powdered sugar

Preparation
Step 1
In a large bowl, beat together the eggs, cream and vanilla. Add the sugar and flour to make a stiff dough. On a lightly floured board, roll out the dough to 1/8-inch thickness. Cut into 1-inch strips, then cut the strips diagonally into 2 1/2-inch log pieces. Make a diagonal 1-inch long slit between the two corners that are farthest apart. Pull one end of the dough through the slit tomake a half-knot.
Heat the oil or fat to 375 degrees. Carefully lower the twisted dough into the hot fat. Cook for about 2 minutes, until golden brown on both sides. Drain on paper towels. Dust the cookies with powdered sugar.
