Ingredients

  • 2 cloves garlic
  • 3/4 c balsamic vinegar
  • 1.5 t Dijon mustard
  • 3/4 t salt
  • 3/4 t freshly ground black pepper
  • 1.25 c EVOO
  • 1/4 c finely chopped shallots or red onion

Preparation

Step 1

1. In a food processor w/ metal blade attached, mince garlic.
2. Add vinegar, mustard, salt, & pepper.
3. Process to combine.
4. With the motor running, slowly drizzle in oil until dressing is emulsified.
5. Taste, and add additional salt & pepper if necessary.
6. Pour into a bowl & stir in shallots.
7. Stir before using.
