Pasta with Creamy Spinach Sauce

Ingredients
- 2 tbsp. plus 1 tsp. olive oil, divided
- 1 medium onion, chopped
- 2 cloves galic, minced
- 1 ( 10 oz.) package frozen chopped spinach
- 1 cup fresh parsley
- 1 tsp. dried tarragon
- Juice of 1/2 lemon
- 1 cup cottage cheese
- Freshly ground black pepper
- 6 cups cooked pasta

Step 1
Place 1 tsp. olive oil in a non-stick skillet or saucepan with a lid, add onion and garlic and cook, stirring occasionally, over medium heat, until softened, about 10 minutes. Add frozen spinach, cover and let cook, turning spinach block over and stirring until it's thawed, about 10 minutes.
While this is going on, place parsley, tarragon, lemon juice, cottage cheese and black pepper in a blender or food processor. Drizzle remaining olive oil over and process until creamy and well blended. Scrape cheese mixture into saucepan with cooked spinach and onions and stir until well combined. Sauce will be very thick. Serve over cooked pasta.
Makes 6 servings ( 1/2 cup sauce plus 1 cup cooked pasta) 46 carb.
