Ingredients
- 1 package yeast
- 1 teaspoon sugar
- 1 cup warm water
- 3-3 -1/2 cups white bread flour
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1/4 cup yellow cornmeal (if using baker's peel)
- 3/4 cup fresh mozzarella cheese, sliced thin
- 2 cloves garlic, finely minced
- 6 leaves fresh basil shredded

Step 1
Combine yeast and sugar with 1/4 cup warm water. Combine remaining water with 3 cups flour, salt and olive oil. When yeast is foamy, add it to flour and stir vigorously. Turn out on floured board and let dough rest while you clean and oil bowl. Knead dough 10 minutes, adding flour if necessary to create a smooth, silky mass. Return to bowl, roll around to coat with oil, cover with double layer of plastic wrap and let rise until doubled in bulk (about 2 hours). Preheat oven to 350 degrees. If using a pizza stone heat stone in oven. Dust peel with a sprinkle of yellow cornmeal, stretch out pizza, lay in on the peel and assemble it on the peel, sliding it on the pizza stone in the oven. Bake 12-15 minutes until crust is light brown.
