Ingredients

  • 1/2 cup finely chopped onions
  • 1 tsp minced garlic
  • 2 TB olive oil
  • 3 TB coarsely chopped fresh cilantro
  • 1/4 tsp ground cumin seed
  • 1 jalapeno, minced
  • 2 TB cider vinegar
  • 1 TB red chile honey
  • 1 tsp salt
  • 3/4 cup corn
  • 3 large Roma tomatoes
  • 1 cup cooked black beans

Preparation

Step 1

Roast corn @ 400 for 10 minutes. Set aside. Lightly saute onions and garlic in oil until soft. Place cilantro, cumin seed, jalapeno, cider vinegar, honey and salt in mixing bowl and blend well. Add last three ingredients as well as sauteed ingredients. Stir to combine well. Set aside for 30-45 minutes to blend flavors.
