Quinoa Chicken Stir-Fry

Easy, delicious and healthy stir-fry! Great way to use lots of veggies from your fridge!
Ingredients
- 1 boneless chicken breast
- salt and pepper
- 1 tbsp vegetable oil
- 1/2 cup uncooked quinoa
- 1 cup water
- 1 zucchini
- 1 red pepper
- 1/2 onion
- 1/2 head broccoli
- 1 large carrot
- 1 tbsp soya sauce
- 1 tbsp vegetable oil
- 2 garlic cloves, minced

Step 1
1. Add quinoa and water to a small pot. Bring to a boil. Reduce heat and simmer for 15 minutes.
2. Cut chicken into strips. Season with salt and pepper. Heat 1 tbsp vegetable oil in frying pan and cook chicken over medium-high heat for ~6 minutes until cooked through.
3. Add soya sauce, oil and garlic to chopped vegetables. Mix well. Add to frying pan. Stir-fry until vegetables are tender-crisp, ~5 minutes.
4. Add cooked quinoa to frying pan and mix well. Season with pepper to taste if desired before serving.
