Ingredients

  • 1 spray cooking spray
  • 8 oz cherries, fresh, pitted & halved or frozen unsweetened pitted
  • 3 large eggs
  • 1 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 oz cognac
  • 1 cup 1% low-fat milk
  • 2/3 cup all-purpose flour
  • 1/3 cup powdered sugar
  • 1/4 teaspoon powdered sugar (garnish)

Preparation

Step 1

Preheat oven 375 degrees. Coat 10-inch pie plate with cooking spray and arrange cherries on bottom. Set aside.

In large bowl, whisk eggs until frothy; whisk in extract, salt, cognac and milk. Add flour and 1/3 cup sugar, a little at a time, whisking after each addition; mix until just combined. Pour mixture over cherries and bake 10 minutes.

Reduce oven temp to 300 degrees and bake until center puffs up and a toothpick in center comes out clean, about 35 minutes. Allow clafouti to cool before sprinkling with 1/4 teaspoon of powdered sugar. Cut into 6 pieces and serve.

Per slice: 3 Weight Watchers points.

Note: This works with any type of fruit such as raspberries, blackberries or apples.
