Ingredients

  • 1 teaspoon active dry yeast
  • 2 cups bread flour
  • 1/4 teaspoon salt
  • 1/2 cup water, lukewarm
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/4 cup black beans, pureed; (if use canned beans rinse and drain first)

Step 1

1. Combine and knead all ingredients (I used my bread machine). Let rise 50-60 minutes. Roll dough on a cornmeal-covered counter. Place dough in pizza pan. For a thin, crispy crust, place toppings on dough and bake immediately.

2. For a thicker, chewier crust, allow dough to rise 15-30 minutes before adding toppings.

3. Place pizza on the bottom rack of oven (Preheated to 500 degrees) 5-10 minutes.

This was so good and so different - made for a really wonderful pizza. We made a tomato sauce, adding a bit of cumin and chili powder to make it Mexican-ish, then topped with caramelized onion and then corn and red and green bell peppers that we'd roasted in the oven first. DH thought the corn was going to be weird, but it turned out to be our favorite part - roasting it made it wonderfully sweet and a great addition to the pizza. Topped with some light cheddar and mozzarella and chilies. Really delicious and healthy and full of fiber. Would make this again in a heartbeat.

I did add the cayenne- also a nice touch - and used the whole can of black beans - which was an accident, but that's the way I'll do it from now on
