Pesto, Red Pepper, and Cheese Sandwiches (makes 2 sandwiches)

Ingredients
- 4 slices sourdough bread
- 4 tbsp pesto
- 4 large pieces of roasted (preferable peeled) red peppers
- 3-4 oz. sliced mozzarella or cheddar cheese
- Hot gardinara

Preparation
Step 1
1. Spread 1 tbsp pesto on one side of each piece of bread
2. Top 2 of the pieces of bread with red peppers. Top the others with mozzarella. Season the
cheese liberally with freshly ground pepper
3. Place the 4 halves on a medium hot grill. Close the top of the grill. Grill until the bread is
toasted and the cheese is melted. Place the melted cheese breads over the red pepper bread.
Eat while hot with a side of hot gardinara.
