Ingredients
- 1/2 cup applesauce
- 1 1/4 cups sugar
- 6 tablespoons butter, softened
- 1/4 cup molasses
- 1 egg
- 1 cup flour
- 1 cup whole wheat pastry flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ginger, not fresh
- 1/2 teaspoon ground cloves

Preparation
Step 1
Spoon applesauce over several layers of paper towels. Spread out to 1/2" thickness. Cover with additional paper towels, let stand 5 mins. Scrape into a bowl.
2. Add 1 cup sugar and butter, beat until well-blended. Beat in molasses and egg.
3. Combine flours-cloves. Gradually add to sugar mixture, beating until blended. Cover and freeze 30 mins, or until firm.
4. Heat oven to 375.
5. With moist hands, shape into 32 1" balls. Roll in 1/4 cup sugar. Place 3" apart on sprayed baking sheets. Bake 8-10 mins. Cool on pans 5 mins, then on racks.
Notes: These had great flavor. I didn't space them far enough apart and they spread and stuck together. Would repeat unless another appealing recipe presents itself - froze great!
