Lamb & Cucumber Kebobs with Feta Sauce

Ingredients
- KEBOBS:
- 1/2 c olive oil
- 1/2 tsp fine lemon zest
- 1/3 c lemon juice (4 med lemons)
- 1 lemon cut into 8 wedges
- 3 garlic cloves minced
- 2 tblsp fresh oregano
- 1/2 boneless leg o lamb
- 1 english cucumber sliced length-wise & cut into 24 pieces
- FETA SAUCE:
- 3 oz crumbled feta cheese
- 4 oz Greek yogurt (1/2 c thick plain yogurt)
- 2 garlic cloves minced
- 2 tblsp olive oil
- 1 tblsp lemon juice

Step 1
Make the kebobs: combine oil, zest, juice, garlic, oregano,& lamb in glass baking dish. Refrigerate 30 minutes minimum
Feta sauce: Pulse all ingredients in food processor or blender until smooth. Refrigerate.
Heat grill to med high. Thread lamb & cukes onto 8 metal skewers finishing each with a lemon wedge. Grill 10 min for medium rare; 15 minutes for med well
