Vanilla Cupcakes

Ingredients
- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup whole milk
- 6 Tbl. butter
- 3 eggs
- 1 cup sugar
- 1 Tbl. pure vanilla

Step 1
Pre-heat oven to 350 degrees. Either butter & flour muffin tins or line with cupcake holders.
1. Whisk flour, baking soda and salt together.
2. Warm milk and butter in saucepan.
3. Beat eggs w/ sugar on high until thick and a pale yellow color (approx. 5 minutes).
4. Beat in dry ingredients. Mix well but do not over beat.
5. Bring milk mixture to a soft boil(watch to make sure milk does not burn). With mixing bowl on low, gradually add milk mixture to sugar and butter. Add vanilla and beat until mixed.
6. Divide batter into muffin cups - fill 1/2 way.
Bake for 15 minutes or until golden brown on top. Cool in tin for 10 minutes before removing. Place on cooling rack and icing when completely cooled.
