Get ready by keeping grill clean. Scrub grill grated with wire brush or spatula before & after cooking. Oil grate so food won't stick.
- Preheat grill for good 10 min or allow 20-30 for plenty of charcoal to turn light gray ash. Keep grill vents open.
- Season food. Massage meat, poultry or fish with dry rub before cooking only.
- No piercing. Use long handled tongs or spatula to turn food. Piercing with fork lets all flavorful juices out.
- No water please. Control flare ups by moving food away from flames on grill. Close grill cover to help cut off oxygen supply.
No peeking. Close grill cover for even cooking & keep closed. Turn only once & test with instant read thermometer.
Baste late. Brush sugary sauces on food near end of cooking to prevent burning.
