Ingredients

  • Preheat grill for good 10 min or allow 20-30 for plenty of charcoal to turn light gray ash. Keep grill vents open.

  • Season food. Massage meat, poultry or fish with dry rub before cooking only.

  • No piercing. Use long handled tongs or spatula to turn food. Piercing with fork lets all flavorful juices out.

  • No water please. Control flare ups by moving food away from flames on grill. Close grill cover to help cut off oxygen supply.

Directions

No peeking. Close grill cover for even cooking & keep closed. Turn only once & test with instant read thermometer. Baste late. Brush sugary sauces on food near end of cooking to prevent burning.
