Ingredients
- Cookie:
- 1/2 cup shortening
- 1/2 cup sugar
- 1 egg
- 3 tbsp. milk
- 2 sq. unsweetened chocolate (2 oz.), melted (6 tbls. unsweetened chocolate mixed with 2 tbls. butter or shortening)
- 1 3/4 cups Gold Medal Flour
- 1 tsp. salt
- 1/2 tsp. baking powder
- **Note - If you use self-rising flour, omit salt and baking powder; bake 8 to 10 min.**
- Peppermint Filling:
- 3 tbsp. cream (12% butter-fat)
- 1/4 tsp. peppermint extract
- 2 cups sifted confectioners' sugar

Step 1
Cookies:
Mix shortening, sugar, and egg thoroughly. Blend in milk and cooled chocolate. measure flour by dipping method or by sifting. Blend flour, salt, and baking powder; stir in. Mold in smooth roll about 2" in diameter. Wrap in waxed paper; chill until firm, several hours or overnight.
Heat oven to 400 degrees. With thin, sharp knife, slice dough about 1/8" thick. Bake on lightly greased baking sheet 10 to 12 min. cool. Place two cookies together with a generous amount of Peppermint Filling.
Filling:
Bend cream and peppermint extract into confectioners' sugar. if desired, tint half the filling pastel green and half the filling pastel pink.
