Ingredients
- 2 English cucumbers (about 1 lb each) - halved lengthwise
- 1 medium red onion, halved and thinly sliced
- 1/3 cup reduced fat mayo
- 2 Tbsp reduced fat sour cream
- 2 Tbsp cider vinegar
- 1 Tbsp honey
- 1 tsp poppy seeds
- 1/2 tsp coarse salt
- 1/4 tsp ground pepper

Step 1
Halve 2 English cucumbers lengthwise. Using a teaspoon, scrap out seeds; slice cucumbers very thinly on the diagonal. In a medium bowl, combine cucumbers with 1 medium red onion, halved and thinly sliced. In small bowl, stir together 1/3 cup reduced fat mayo, 2 Tbsp reduced fat sour cream, 2 Tbsp cider vinegar, 1 Tbsp honey, 1 tsp poppy seeds, 1/2 tsp coarse salt, and 1/4 tsp ground pepper. Add to cucumber mixture, toss and serve immediately.
