Ingredients

  • 3 Tbsp butter, melted (sometimes use olive oil)
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 3 large baking potatoes (about 12 oz) each cut lengthwise into 8 wedges
  • 1 large heavy duty foil cooking bag
  • 1/2 cup crumbled bleu cheese (can use feta or gruyere)
  • 1 Tbsp chopped fresh parsley leaves

Step 1

In large bowl, combine butter, salt and pepper. Add potatoes and toss to coat with butter mixture. Place potato mixture in foil bag & seal. Place foil bag on hot grill rack. Cover and cook 30 minutes or until potatoes are browned and fork tender, turning bag over once halfway thru grilling. Before serving, cut an X in top of bag to let steam out, then pull back full to open. Transfer potatoes to platter, sprinkle with cheese and parsley.

NOTE: Usually cut the potatoes into very thin slices - 16 rather than 8, and only grill for 20 minutes.

NOTE: Michael suggested adding sour cream and chives as garnish. Maybe the Whipped Horseradish Cream would be good to (see separate recipe for it).
