  • 6 tbsp. (3/4 stick) butter
  • 1/2 tsp. lemon zest
  • 3/4 cup sugar
  • 2 eggs
  • 1 3/4 cups flour
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 3/4 cup milk
  • 1 1/2 tsp. vanilla
  • 1 pint (250 g) blueberries, fresh or frozen

Step 1

Preheat oven to 375. In bowl of electric mixer beat butter, lemon zest and sugar until fluffy. Add the eggs one at a time beating well after each addition. In a bowl stir the dry ingredients together. In another bowl stir the milk and vanilla together. Alternate mixing the dry mixture and the milk mixture into the butter mixture until just moistened. The batter will be lumpy. With a rubber spatula gently fold the blueberries until evenly distributed, but only a few strokes and very gently so as not to break the fruit. Pour batter into muffin tins and ake 18 to 20 minutes or until golden.
