Ingredients
- For the muffins:
- 1 cup sour cream
- 1 teaspoon baking soda
- 1 cup sugar
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup softened unsalted butter (1/2 stick)
- 2 eggs
- 1 teaspoon vanilla
- For the topping:
- 1/2 cup brown sugar
- 1 teaspoon cinnamon

Preparation
Step 1
Preheat oven to 350 degrees.
In a bowl comnine sour cream and baking soda. Set aside.
In another bowl combine flour, salt and baking powder. Set aside.
In another bowl, cream butter and sugar until light and fluffy. Add one egg at a time scrapping down the sides of the bowl add vanilla. Fold in dry ingredients alternating with the sour cream and baking soda mixture.
Line a muffin pan with paper liners. With a ice cream scoop fill half way and add 1 teaspoon of the topping and cover up with remaining batter.
