Ingredients

  • 1/2 cup creamy peanut butter
  • 2 tsp sugar
  • 2 tsp rice vinegar
  • 1/2 tsp crushed red pepper
  • 2 tsp canola oil
  • 12 oz chicken breast, cut into bite sized pieces
  • 1/2 cup sliced green onions
  • 2 cloves garlic, minced
  • 1 boboli or other pizza crust
  • 1 cup sweet red pepper, cut into strips
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup chopped cilantro
  • Thinly sliced green onion (optional)

Preparation

Step 1

Preheat oven to 450 degrees.
In a small bowl, combine peanut butter, 1/4 cup warm water, sugar, rice vinegar, and crushed red pepper. Set aside.
In a medium skillet, heat oil over medium heat and cook chicken until no longer pink. Add the green onion and garlic. Cook 1 minute more. Turn heat to low and add 2 tbsp of peanut butter mix. Mix until the chicken is coated and set aside.
Spread the pizza crust with the remaining peanut sauce. Top with the chicken mixture, red pepper strips, and the cheese.
Bake 11 - 14 minutes until cheese is melted and crust is browned. Remove from the oven and sprinkle with the cilantro and if desired, the green onions.
