Ingredients

  • My grandmother Paul always said to season chicken and return it to the refrigerator and let it sit as long as time permits, at least two to three hours. And always use small chickens.
  • Salt and pepper, for seasoning chicken
  • 1 (2 1/2 pound) chicken, cut into pieces
  • Peanut oil, for frying
  • 3 eggs
  • 1/3 cup water
  • 2 cups self-rising flour
  • 1 teaspoon black pepper

Step 1

Season the chicken pieces well with salt and pepper and place in the refrigerator for at least 2 hours, up to overnight.

Heat peanut oil in a cast iron skillet to 350 degrees F.

Beat eggs and water in a small bowl. In a shallow bowl, season flour with pepper. Dip chicken pieces in egg mixture and then coat well in flour mixture. Carefully add to oil, in batches if necessary, place lid on top of skillet, and fry until brown and crisp. Remember that dark meat requires a longer cooking time (about 13 to 14 minutes, compared to 8 to 10 minutes for white meat.)

I have been a fan of Paula Deen's forever but this is the first time that I tried Grandmother Paul's Fried Chicken and it turned out excellant. I had family over and they asked how I cooked it and I didnt want to tell them...my little secret...besides I like being envied for my food dishes. Although this one isnt mine I am going to treasure it forever!

This is the best fried chicken I've ever had. I made it with boneless, skinless chicken breasts (the only thing my husband will eat and it turned out great. I didn't have to change a thing.

I make this regulary it is Fantastic. I also change it up using Paula's Other Recipes. I like to Season it like Grandmother Paul's and also use a Buttermilk Hot Pepper soak before Frying. I Love Paula Dean She Rocks! Brings back lots of Childhood memories of Tennessee, Good Ole Southern Cooking.

In an effort to slim down this recipe, I used skinless breasts and eggbeaters to replace the eggs. When using eggbeaters, you don't add the 1/3 cup water. Also important to get the peanut oil up to temperature before adding the chicken - this leaves the finished product almost grease free. It was outstanding!

Oh, yes it is!! My sister and I decided to replicate one of our mom's meals and I went to Paula for assistance. My sister kept saying, "Promise it will be like mommie's? and I said, "Trust me" Perfect! It was so easy to follow the recipe and although we fried the chicken a bit longer, it was all we could hope it would be. Just so savory and tender. Served with mashed potatoes and peas, we shared childhood stories and ate ALL the chicken!

Grandson loves it. Cut chicken into 3/8" strips, cooks in 5-6 minutes. Made sauce mixing honey with a little mustard.

And this is the best, easiest, fried chicken recipe...better than KFC. I can't tell you how many times I tried to make fried chicken and it turned out horrible! Not with this recipe, great every time. Easy to add other flavors to change it up.

Who ever said nothing good comes easy obviously never tried to follow Grandmother Paul's Fried Chicken recipe. The simple steps it took to create the chicken ended with a nice bold flavor.

I tried the chicken and it is even better than my own!

I made this for my entire family (aunts,uncles,cousins,nephews!) They couldn't believe how moist and flovorful it was. The chicken was so easy to make. Thank you so much for that recipe.

My wife and I loved this chicken recipe. One of the best we have tried and so easy to make.

This recipe was totaly flavorless. I did however add hot sauces to the flour, Morton hot salt, paprika, and garlic powder, and made the flour a paste, and then applied this to the chicken. That was flavorful.

Again Paula has showed us just how easy it is to make good home style cooking!!Her chicken comes out so good just like my mom always made. Thanks Paula!!
