Ingredients

    c. white wine vinegar

  • 1/2

    c. onion, minced

  • 1

    garlic clove,minced

  • 2

    T. green onion, chopped

  • 1/4

    c. pimientos, small dice (can use jarred, drained)

  • 1/4

    c. Italian flat leaf parsley, finely chopped

  • 2

    T. sugar

  • 1

    c. olive oil

  • Salt to taste

  • Black pepper to taste

Directions

Place vinegar, onion garlic, green onion, pimientos, parsley & sugar in a bowl. Begin whisking in olive oil a few drops at a time. After an emulsion has been established, add remaining oil in a slow steady stream while constantly whisking. Season with s7p . Cover & refrigerate (use in 2 days). Before serving whisk to re-establish emulsion &redistribute ingredients.
