Aldo's Ristorante Italiono House Vinaigrette
Makes 16 (2 T) servings
- 1 c. white wine vinegar
- 1/2 c. onion, minced
- 1 garlic clove,minced
- 2 T. green onion, chopped
- 1/4 c. pimientos, small dice (can use jarred, drained)
- 1/4 c. Italian flat leaf parsley, finely chopped
- 2 T. sugar
- 1 c. olive oil
- Salt to taste
- Black pepper to taste
Place vinegar, onion garlic, green onion, pimientos, parsley & sugar in a bowl.
Begin whisking in olive oil a few drops at a time. After an emulsion has been established, add remaining oil in a slow steady stream while constantly whisking.
Season with s7p . Cover & refrigerate (use in 2 days). Before serving whisk to re-establish emulsion &redistribute ingredients.
