  • 1 cup butter, softened
  • 1/2 cup powdered sugar, unsifted
  • 2 1/3 cup unbleached flour, unsifted
  • 4 eggs
  • 2 cups granulated sugar
  • 1/3 cup lemon juice
  • 1 tsp baking powder
  • 2 TB powdered sugar

Preparation

Step 1

In large bowl, cream buter and powdered sugar until fluffy. Add 2 cups flour, beating until blended. Spread evenly over the bottom of a 9x13 pan that has been well greased. Bake at 350 for 20 minutes. In a small bowl, beat eggs til light and foamy. Gradually add sugar, beating til thick and blended. Add juice, 1/3 cup flour and bp. Pour lemon mixture over baked crust and return to oven. Bake 25-30 minutes or until custard is set. Sprinkle with powdered sugar. Let cool.
