Coating each piece of chicken with Dijon mustard not only helps the crumbs to adhear but also gives the chicken a real flavor boost.

Ingredients
- 3 to 4 lbs. chicken pieces
- 1/3 cup dijon mustard
- 2 cups dry, unseasoned bread crumbs
- 1/4 cup minced parsley
- 2 tbsp. butter, melted
- 2 garlic cloves, minced
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper

Preparation
Step 1
Spread chicken pieces liberally with mustard.
Combine breadcrumbs, parsley, butter, garlic, salt and pepper.
Coat chicken pieces with bread crumbs, shaking off excess. Place skin side up on baking sheet and bake at 350* oven until done, about 40 to 60 minutes.
