- 1/4 lime juice
- 2 T. olive oil
- 1/2 cup salsa, divided
- Salt and pepper to taste
- 1 pound beef flank steak
- 2 T. fresh cilantro, chopped

Step 1
In a large, zipper-topped plastic bag, combine lime juice, olive oil, half the salsa, and salt and pepper. Place beef flank steak in plastic bag, turning to coat. Close bag securely and marinate in refrigerator at least 6 to 8 hours (overnight is ideal), turning occasionally.
Preheat broiler. Remove beef from the bag and discard marinade. Place beef in a broiler-proof baking pan (NOT glass) and broil 5 minutes away from heat; cook about 5 to 7 minutes on each side for medium rare or cook to desired doneness.
Slice meat diagonally and serve with remaining salsa and cilantro sprinkled over the top.
