Ingredients
- 1 # Bay Scallops Washed & Dried
- 1 T EVOO
- 1 T Butter
- 3 T Fresh Lime Juice
- 4 T Lime Ginger Butter (recipe follows), Chilled
- Fresh Parsley for Garnish
- LIME GINGER BUTTER
- 1/2 Stick Butter Room Temp.
- 2 t Lime Zest
- 1 t Ground Ginger
- 1/2 t Salt
- Fresh Pepper
- Small Bowl Mix All Lime Ginger Butter Ingredients Until Smooth. Shape Into 21/2" Cylinder Wrap in Foil.
- Refrigerate Until Firm, About One Hour.

Step 1
Large Skillet High Heat With EVOO & Butter, Add Scallops, Stir Until Golden, About 2 Minutes.
Pour Off Fat.
Stir in the Lime Juice, Cook About One Minute.
Add Lime Ginger Butter ONE TABLESPOON AT A TIME.
Cook Until A Thick Sauce Forms.
Serve Hot, Garnish with Parsley.
