Preparation

Step 1

In a saucepan combine milk, butter, sugar, 2 tsp of anise seed, and salt. Heat, stirring constantly, until temperature reaches 110 degrees. Butter may not be completely melted. In a large mixing bowl, dissolve yeast in warm water. Let sit for 10 minutes. Add milk mixture to mixing bowl as well as one egg. Gradually beat in enough flour to make a soft dough (about 3 to 3 1/2 cups.) Turn out onto a floured board and knead until smooth and satiny, adding more flour as needed. Place dough in a greased bowl and turn over. Cover and let rise in a warm place until doubled in size (1 - 1 1/2 hours.) Punch dough down and divide into 24 pieces. Shape each into a smooth ball and place about 2" apart on greased baking sheets. May also place in greased muffin tins. Beat remaining egg and brush over dough. Sprinkle with remaining anise. Cover and let rise about 45 minutes. Bake at 400 for 15 minutes.
