Apple Walnut Cake

A moist cake with apples and walnuts in every bite. This cake is so full of flavor that no frosting is needed. A simple dusting powdered sugar will do!

Ingredients
- 3 eggs
- 1 3/4 cup sugar
- 1 cup canola oil
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 5 apples, peeled, cored and chopped
- 1 cup chopped walnuts
- 1/4 cup powdered sugar, optional

Preparation
Step 1
In a medium-size bowl, blend together the eggs, sugar, oil and vanilla. In a separate bowl, sift together the flour, baking soda, cinnamon and salt. Add the flour mixture to the egg mixture mix just until blended. Fold in the apples and nuts.
Pour the batter into a 9x13 pan that has been sprayed with cooking spray. Bake at 350 degrees for 40-45 minutes. Allow the cake to cool and then sprinkle the top with powdered sugar.
