Ingredients

  • 8 oz spaghetti
  • 2 cups grape tomatoes, halved
  • 4 cloves garlic
  • 1/2 onion
  • 2 T butter
  • 2 T flour
  • 2 cups milk
  • 2 cups grated cheddar
  • 2 cups grated jack or mozzarella
  • 1/2 t cumin
  • 1/4 t cayenne
  • 2 t fresh lime juice
  • salt and pepper
  • 4 cups shredded cooked chicken

Preparation

Step 1

lightly grease 12 inch skillet.
cook spaghetti according to package, drain.
turn on broiler.
put grape tomatoes skin side up along with garlic and onion on foil lined baking sheet. broil 5-7 minutes on rack placed 6 inches from heat. remove from heat and let cool. dice.
reduce oven to 350 degrees.
melt butter in saucepan over medium heat. add flour and whisk till combined -30 seconds. slowly pour in milk and stir for 3-5 minutes, till thickens. turn off heat and stir in half the cheeses 1/4 cup at a time.
stir in diced veggies, cuman, cayenne, and lime juice, add salt and pepper. add spaghetti and chicken. stir well and put into skillet. top with remaining cheese. bake uncovered 20 minutes till bubbling and brown.
