Apple Bacon Coleslaw

Ingredients
- 1/4 cup cider vinegar
- 1 cup mayonnaise
- 1/3 cup honey
- 2 tsps kosher salt
- 1/4 cup pulp free orange juice
- juice from 1/2 fresh lemon
- 1 tsp ground black pepper
- 1 sm fennel shredded
- 1 medium cabbage, cored, shredded
- 1/2 pack of bacon fried crispy then broken up into small pieces
- 1 bunch scallions, thinly slice 1/2 cup finely minced parsley leaves, optional
- 4 firm apples, peeled, cored and shredded

Preparation
Step 1
Mix everything in a large bowl and let sit in the fridge over night…This is always better if you let it sit for a day or so…really lets the flavours out…
1664 Blanc is a flavoured Wheat Beer…it has a light citrus taste…not too over powering.
This beer is best served in a glass …pour 1/4 of the beer into glass then give the bottle a good swirl…as too incorporate the sediment in the bottom of the bottle for the full flavour…

I just prepared this for dinner tonight. And of course I had to sample it – OMG – love it. Can’t wait to taste it after it has sat for 8 hours!!! Only change I did – was used 1/2 Low Fat Greek Yogurt in place of 1/2 cup of the mayo (trying to eat healthier, and finding using the LF Greek Yogurt has been a great exchange). Love the addition of the fennell! Going to grill some burgers, out on a snowy deck – think spring with this meal!

I would like to take this to a party I’m attending in a week. How many days in advance can I make this? I was worried that too long in advance and the cabbage would not be as crisp and that the apples might start to turn brown. This just looks and sounds so yummy, I can’t wait to try it.
Just made this . It is just the best coleslaw ever!! I used fresh Florida cabbage, honey, oranges, and lemons. I have several favorite coleslaws, and this is now at the top. The apples and fennel are not overwhelming, they ad an extra subtle flavor- I followed the recipe exactly, but it is even good without the mayo. My husband doesn’t care for mayo, so filled a bowl for him before adding the mayo to the rest- and he gave it his top rating.

I finally got around to making this. I love coleslaw, but my husband and son do not. I convinced them to try this one because it has apples in it – and they love apples. It was a big hit! Leftovers didn’t last as long in frig as regular coleslaw because of the apples, so I might cut recipe in half if its just the 3 of us…but I will definitely make again. Thanks!!
I feel awkward posting this because everyone else’s comments were so positive, but I made this yesterday and felt that the salt and apple cider vinegar tastes were so overwhelming I could not serve it as planned. I tried letting it sit overnight thinking it would mellow out, but it did not. I even tried adding sour cream and that did not help. I know I followed the recipe exactly, so I guess I’m just used to a more subtle flavor. I may try again cutting both the salt and ACV amounts in half.
Yes, Bacon gets soggy when sitting. Leave that off and add just before serving!
Yes like Niki said in her comment , the bacon will go soggy. I make this up one to two days ahead and then add the bacon the morning off the party. You want the bacon to sit in it for a bit as so infuse the bacon flavor…Hope your party is FABOOSH…Cheers
Yes it has a slight taste of black licorice . But when added to this, with all the other ingredients, it’s adds more of a zest flavor. You can’t pick out the black licorice taste…Cheers
