Ingredients
- 1 cup rice, cooked
- 2 cups 1% low-fat milk
- 1/2 cup sugar substitute, splenda
- 1/2 tsp. salt
- 1 tsp. vanilla
- cinnamon
- 1/2 cup raisins, seedless

Preparation
Step 1
1. Preheat oven to 325.
2. Bring water to boil in a small saucepan. Reduce heat to low.
3. Add rice; simmer 5 minutes.
4. Drain well.
5. Return rice to saucepan.
6. Add milk, sugar, and salt.
7. Heat just until warm, add vanilla.
8. Pour into a 1 1/2 quart baking dish.
9. Bake, stirring every 30 minutes, until thickened, about 1 3/4 to 2 hours.
10. Serve warm or cold, sprinkle with cinnamon before serving.
