Ingredients

  • 7 oz sweetened condensed milk
  • 1/3 cup sugar
  • 10 T key lime juice
  • 7 egg yolks
  • 1 9" graham cracker pie shell
  • 7 egg whites
  • 1-1/2 T + 1/2 tsp cream of tartar
  • 3/4 cup sugar

Preparation

Step 1

Combine the condensed milk and 1/3 cup sugar in a bowl and mix well. Add the lime juice and egg yolks and mix just until blended.

Spoon into the pie shell. Bake at 350 for 20 minutes or just until set.

Beat the egg whites with the cream of tartar in a mixer bowl until foamy. Add 3/4 cup sugar gradually, beating until stiff but not dry peaks form.

Spread over the pie, sealing to the edge. Bake for 15 minutes or longer or broil just until golden brown.
