Preparation
Step 1
Husk and remove silk from cobs of corn. Boil for 8 to 10 minutes. Remove from heat and brush with one of these toppings. Each makes about 1/3 cup, enough for 6 cobs of corn.
Lime Chili Butter: Mix 1/4 softened butter, 1 tsp grated lime rind and 1/4 tsp chili powder.
Pesto Butter: Mix 1/4 cup softened butter, 2 Tbsp grated Parmesan cheese, 1 clove garlic (minced) and 1 Tbsp fresh basil (minced).
Butter Provencale: Mix 1/4 cup softened butter, 1 Tbsp Dijon mustard and 3/4 tst herbes de Provence.
