Quick Cassoulet 1 Picture

Ingredients

  • 3 tablespoons olive oil
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 tablespoon minced garlic
  • 12 ounces sliced smoked sausage
  • 3 cups canned cannellini beans, drained
  • 3 cups canned diced tomatoes
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • 3/4 teaspoons salt
  • 1/2 teaspoons pepper
  • 1/2 cups panko breadcrumbs
  • 2 teaspoons olive oil, for breadcrumbs

Step 1

*1*.In a large pot, heat 3 tablespoons olive oil over medium heat. Add chopped onion, carrots, celery, and minced garlic, and cook until they begin to soften, about 3 minutes. Add sliced smoked sausage and cook for about 3 more minutes. Add cannellini beans and tomatoes, bay leaf, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cover and simmer over medium-low heat until the vegetables are tender, about 20 minutes.
*2*.In a small skillet, toast panko breadcrumbs tossed with 2 teaspoons olive oil and 1/4 teaspoon each salt and pepper over medium-low heat until golden, about 4 minutes; sprinkle on top of the cassoulet.
