Ingredients

  • 1 cup Applesauce or mashed bananas. (I like to use 1/2 cup Applesauce and 2 mashed bananas)
  • make sure that it equals 1 full cup*
  • 1 cup sugar
  • 1/2 cup butter or shortening
  • 1 egg
  • 2 cups flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 3 cups Oatmeal (Old fashioned is best but quick also works)
  • 1 cup chopped nuts
  • 1 cup raisins or dried cherries or chopped dates
  • 1 cup chocolate chips or chunks
  • flaked coconut is also a great addition

Preparation

Step 1

Combine flour, salt, soda, baking powder, cinnamon and cloves in medium bowl and set mixture aside.
Cream room temperature butter and sugar until light & fluffy.
Add egg and beat again.
Add Applesauce or mashed banana or the combination of the two. Beat again.
Add the flour mixture until well blended.
Stir in Oatmeal, raisins, nuts and chocolate chips. etc.
Drop by spoonfuls or use a ice cream scoop and place balls of dough on cookie sheet.
Bake at 375 degrees for 10 to 12 minutes.
Let cool on wire racks. Place cooled cookies in well sealed containers.
These cookies also freeze very well.
