Ingredients
- 3/4 c. olive oil
- 1/2 c. red wine vinegar
- 2 cloves garlic, minced
- 1/3 sm. red onion, grated
- 4 oz. pimentos, chopped
- 1 med. head lettuce
- 1 med. head Romaine
- 1 c. artichoke hearts, drained, halved
- 1 med. red onion, sliced thin,
- 4 oz. pimentos, chopped
- 1/2 - 3/4 c. grated fresh Parmesan cheese

Preparation
Step 1
Tear Romaine and head lettuce in bowl, add pimento, red onion and artichoke hearts. Sprinkle with Parmesan cheese. Pour dressing over all and toss thoroughly. Chill 15-20 minutes before serving.
Combine olive oil, red wine vinegar, garlic cloves, grated red onion and shake or blend. Make several hours in advance.
