Ingredients

  • 16 ounces, weight Dry Black Eyed Peas
  • 6 cups Water
  • 1 cube Vegetable Bouillon
  • 4 slices Bacon
  • 1 whole Medium Onion, Chopped
  • 3 cloves Garlic, Chopped
  • 1 whole Yellow Bell Pepper, Stemmed, Seeded, And Chopped
  • 2 cups Cooked Ham, Diced
  • 1 teaspoon Cumin Powder
  • 3/4 teaspoons Ground Black Pepper
  • 1/2 teaspoons Dry Cayenne Pepper
  • 1/4 teaspoons Salt
  • 1 Tablespoon Honey
  • 1 whole Jalapeno, Seeded And Chopped
  • 1 can (10 Oz. Size) Original Rotel Tomatoes
  • 2 cups Chopped Fresh Greens (Kale, Spinach, Mustard Greens Or Collard Greens)

Preparation Instructions

1. First rinse all the dried peas and pick out any brown ones.

2. Place in slow cooker with water and bouillon.

3. In a skillet, cook the bacon about halfway—just till the color changes, but not till crispy. Reserve the bacon grease and place the bacon on a paper towel to cool.

4. Saute the onion, garlic and bell pepper in the bacon grease until vegetables are soft.

5. Break the bacon up into little pieces and stir into the slow cooker with the cooked veggies and cubed ham.

6. Add the spices, honey, jalapeño and Rotel.

7. Cover and cook for 3 hours on high, then 2 hours on low.

8. Stir in chopped greens, cover and cook on low an additional 30 minutes until greens are soft.

Serve with cornbread and a southern style hot sauce. Enjoy!
