Ingredients
- 4 veal chops, 3/4-inch thick
- 3 tbsp. butter or margarine
- 4 strips bacon, cut into 1-inch lengths
- 3 tbsp. minced shallots or green onions
- 2 to 4 tbsp. fresh lime juice
- 1 c. loosely packed fresh herb leaves(parsley, fresh mint and other garden herbs or 1/4 c. chopped fresh parsley, 1 tbsp. each dried basil, tarragon and
- mint leaves)
- 1/2 to 1 tsp. salt
- 1/4 to 1/2 tsp. black pepper

Step 1
In a 12-inch heavy frying pan or skillet, brown veal chops in butter for 2 min. on each side over high heat. Remove to warm ovenproof serving platter. Add bacon to skillet. Sauté over medium heat until crisp. Add shallots. Cook 2 min. longer. Drain and discard all but 2 tbsp. of the fat. Stir in lime juice. Scrape brownings from bottom of pan. Add juices drained out of chops on the platter. Stir in herbs, salt and pepper, blending well. Divide herb-bacon mixture among the chops. Cover loosely with foil so it doesn't touch herb mixture. Bake at 400° for 15 min. Serve immediately.
